When to use a board to stack cakes

Hi, I’m new to this site and I’ve just been watching the box explosion course. I noticed that Paul uses loads of dowels but didn’t use a cake board between the tiers. When is it “safe” not to use a cake board? I can see by the number of dowels used that he is being careful!

Thanks, fantastic site, i’ll be signing up for full membership soon.

Hi Sue, I asked this question when I watched the box explosion tutorial and Paul confirmed that there is a cake card under the top tier, you just don’t see it in the video!

Hi Sue

Paul always puts each tier on it’s own cake board which he then places onto a cake drum while he ganaches the cake. You’ll notice he then detaches the board and cake from the drum with a palette knife & places it onto the bottom tier which he’d already prepared with dowels.
