White Chocolate Ganache Flavouring?

Can anyone suggest any Flavours that would go well in white chocolate ganache? I am making a chocolate cake with a white chocolate ganache and looking for a subtle flavour that would go with it. Any suggestions and how to do this? Many Thanks.

Hi helcakes

You can infuse the cream with flavours of your choice. If you want a lovely vanillas flavour boil a vanilla bean pod with the cream, leave it to infuse, scraping out the beans and adding to the cream. Warm the cream up again and add to chocolate. You can do this with different fruit flavoured teas and with herbs and spices. Fruit purees can also be added. hHwever, to obtain a more intense flavour, The Cake Decorating Company in Nottingham keep an array of LorAnn flavours which can be added as we would vanilla extract. The oils are very strong, very small amount goes a long way. Different liqueurs can be added either to the sponge or to the ganache. I add different jams and preserves to white ganache, raspberry seedless jam goes well as does lemon or orange curd. Do you have a flavouring in mind? If you’re introducing other liquids besides the cream it is better to use more chocolate and if you use fresh fruit purees the ganache shelf life will be greatly reduced because of the risks of bacteria and molding. Hope some of these suggestions are helpful.

Many thanks for the suggestions I will give them a go! I am not sure what flavours to use really, I was looking for something to make the chocolate cake a little different.

To help you more with flavour ideas have a look here http://www.thecakedecoratingcompany.co.uk/catalog/index.php?cPath=415_643, once you enter the shop click on cake making supplies and then on food flavourings and extracts, you’ll be spoiled for choice. For white chocolate (unless you want it to colour), I would suggest keep to the more clear flavourings. Hope you find something to suit you.
