I noticed on the exposion cake, Paul put wires straight in to it. I thought this wasn’t allowed in the UK

That’s correct and Paul does say in subsequent tutorials that posy picks must be used when inserting wires into cakes. If you type in the search box ‘Exploding Santa cake’ there is answer from David Brice which you will find useful. You can see other comments if you search ‘Wire in cakes’. Hope this helps.
