Hi Polly

It’s quite difficult to produce large egg free cakes. If you don’t have any experience of baking eggless cakes, I would recommend using a good free from cake mix. This is a perfectly acceptable thing to do and would take away the stress of potential cake failure. There are some extremely good cake mix companies who would be best placed to advise you on how much ingredients you will require for your needs

Here are a few suppliers:
https://wrightsbaking.co.uk/?s=plain+eggless+cake+mix
https://www.sweetsuccess.uk.com/egg-free-cake-mix
https://www.onlyeggless.com/egg-free-vanilla-sponge-cake-recipe

They are all contactable by telephone or email. I have first-hand experience of Wright’s excellent cake mixes, although not the egg free. Their customer service team is more than happy to help. I’m sure they will all be happy to guide you.

Hope this will be of some help.
