How soon before a wedding can I marzipan a fruit cake ? The wedding is in 4 weeks but I would like to cover the cake in the marzipan in advance. Thanks

Usually marzipan can go on two or three days in advance to help it dry before the fondant is laid. If you do it too
early it can have hairline cracks. Before icing brush the marzipan with some vodka to allow the icing to stick.
