temperature for maderia cake

Hi Can anyone tell me the correct temp to cook a maderia cake 10 inch with 9eggs.
18oz marg
18oz sugar
9eggs
18oz SR flour
Mine was not too good 🙁

Hi Caz, I have a ‘fierce’ oven so would probably bake a Madeira at 130 degrees. However, that recipe (equal weights of fat, sugar and flour) is for a victoria sandwich. A Madeira has extra flour in it which makes it more dense. For a nice vanilla cake though try Jane Hornby’s recipe on the BBC Good Food website. It’s a pain when you waste that amount of ingredients 🙁

Hi Caz

It’s better to bake large cakes on a lower temperature for longer. I bake madeira cake on 140c fan forced oven or 160c in an ordinary oven for 2 hrs and 10 minutes. All ovens vary, you’ll know your own oven and whether it bakes cool or fierce. If you type in the search box ‘madeira cake’ there are 2 pages of answers which have many helpful hints and tips on baking up a successful madeira cake. Thanks for your suggestions.. not sure what went wrong yesterday. I tried using a flower nail surrounded with paper etc but I dont think I cooked it for long enough, I had it on 150 fan for about 1hr 50 mins….. never mind I will try again 🙂

Hi Caz

I didn’t notice the recipe until Doodlecake pointed it out and she’s right, that is a Victoria sandwich. To correct the amounts you need to add 9oz of plain flour as well. Don’t give up.
